It’s carbon dioxide gas trapped under high pressure in the candy. When the candy melts in your mouth, the gas bubbles are released, creating that signature popping sensation. Each crystal contains about 600 psi (pounds per square inch) of pressure!
Don’t worry—the science is completely safe, releasing much less gas than a standard soda can.
